WLS Mini Crustless Chicken Spinach Feta Quiche LF LC

Ingredients
1 1/4 cup of egg whites eggbeaters1 12.5 oz can of chicken chunks 1 cup of feta cheese1 1/4 cup of skim ricotta cheese1/2 cup of canned spinachgarlic salt to tastepepper to taste
Directions
Preheat oven to 350.

Put all of ingredients into a large mixing bowl and mix with a spoon, breaking up the chunks of chicken so it will be uniform throughout the mixture, as well as the spinach. Spoon a small amount into a greased 24 count mini muffin tin/pan. Will have mixture left over. Bake for 20 minutes. Add the rest to another tin/pan or wait until the first batch has gotten out of the oven and cooled.

Makes 35 mini muffin quiches, unless less is added to each mini muffin cup. Don't overfill.
