Pasta e Fagioli

1 Tbsp. olive oil1 c. chopped onion3 cloves garlic, minced2 cans (14.5 oz.) Italian style stewed tomatoes, undrained3 c. chicken broth (I use Swanson Natural Goodness)1 can (15 oz.) white kidney beans, undrained1/4 c. chopped fresh Italian parsley1 tsp. dried basil leaves1/4 tsp. ground black pepper4 oz. uncooked small shell pasta
Heat oil over medium heat in a soup pot. Add onion, cook 5 minutes. Add garlic, cook 1 more minute. Add tomatoes with liquid, chicken broth, beans with liquid, parsley, basil and pepper. Bring to a boil over high heat, stirring occasionally. Reduce heat to low, cover, simmer 10 minutes.
Add pasta; cover. Simmer 10-12 minutes or until pasta is just tender, stirring occasionally. Serve immediately.

This pasta fagioli is like the one my mother made! We called it the "poor man's soup", unlike the versions with meat and fancy stuff in them! It is also much better for a lo-carb diet (also diabetic). The chicken broth is a great addition ...oh it makes it delicious! Thank you for sharing the recipe - 11/28/13

Parmesan is great on top! I also make it using other types of beans. And sometimes I add carrots, too!
