1/2 lb red potatoes1 zucchini1 summer squash2 rings red pepper3 garlic cloves, smashed1 ring onion4 baby bella mushroom caps1 Tbsp olive oil2 tsp Herb's de Provonce
Quarter potatoes, slice squashes 1/2 inch thickness, quarter mushroom caps, slice peppers and onions bite size. Mix olive oil and herbs in bowl add vegies and stir to coat.
Roast in oven at 450 for 30 minutes, turning once
Roast on grill in basket for 30 minutes indirect heat turning 3-4 times, direct heat for last 5 minutes
Saute on stove top
