Gina's Spicy Sweet Potato and Black Bean Soup

Ingredients
Sweetpotato, fresh, 4 cup, cubes Onions, raw, 1 large *Green Bell Pepper - 1 large pepperCarrots, raw, 2 large (7-1/4" to 8-1/2" long) *Trader Joe's Organic Hearty Vegetable Broth, 4 cup Water, tap, 4 cup (8 fl oz) *Patak's Tikka Masala Curry Paste, 2 tbsp *100% Natural Tomato Paste, 2 tbsp *Roma Tomatoes, 1 cup Peanut Butter, smooth style, 2 tbsp Curry powder, 1 tsp Cinnamon, ground, 1 tsp *Trader Joe's Organic Black Beans, 1 can
Directions
Chop and then sautee onions, carrots, garlic and pepper. Add spices and tikka paste, tomato paste; add broth and water and bring to a boil. Salt and pepper to taste. Toss in the sweet potatoes and simmer for 30 mins. Add black beans and cook until tender. Stir in peanut butter at the end. Use any seasoning as desired - the curry and tikka are optional but I think the flavor is great!
