Chicken Piccata with Capers

Ingredients
4 (6- ounce) skinless, boneless chicken breast halves1/4 cup all purpose flour2 tablespoons butter1 tablespoon olive oil1/2 cup white wine1/4 cup fresh lemon juice2 tablespoons capers(drained)2 teaspoons fresh minced garlic1/4 teaspoon salt1/4 teaspoon black pepper4 cups hot cooked spaghetti2 tablespoons chopped fresh parsley
Directions
1. Chicken should be pounded to 1/2 inch thickness. Place flour in a shallow dish and dredge chicken in flour.
2. Heat butter and oil in large skillet over medium high heat. Add chicken, and cook for 3 minutes on each side or until browned. Remove chicken from pan; keep warm. Add white wine, lemon juice, capers, and garlic to pan; scrape pan to loosen browned bits. Cook for 2 minutes or until slightly thickened. Sprinkle with salt and pepper. Serve chicken over pasta. Top with sauce; sprinkle with parsley.

    I love Chicken Piccata and this was super easy. I used chicken broth in place of the wine and added an extra 1/4 cup of water. Next time I may cut down on the amount of lemon juice. It was just a bit too strong, but there was plenty of juice for the pasta. Mega YUM! - 6/14/08

    I used chicken broth instead of white wine and to reduce the amount of fats I used only half the butter.I really enjoyed the meal. - 11/26/07
