Indian Style Potatoes with Peas (Aloo Mattar)

Ingredients
2 tbsp olive oil or sunflower oilI medium onion-chopped2 tbsp ginger-finely chopped or sliced1 medium Idaho potato- boiled and cut into big pieces1/2 pack frozen peas-boiled2 medium red ripe tomatos-chopped11/2 tsp salt1/2 tsp chilli powder1/2 tsp coriander powder1/2 tsp cumin powderfreshly chopped coriander- for garnish
Directions
Heat the oil in a pan.
Add the chopped onions and ginger and cook on medium heat till brown.
Add the tomatos to the pan and cook till they turn soft.
In the meantime, boil a potato in the microwave (approx. 8 mins).
Cut the potato into pieces and add to the pan.
Add the salt, chilli powder, coriander powder and cumin powder. Mix well.
Boil frozen peas in a cup of water in the microwave (approx. 5 mins).
Add to the pan.
Add about 2 tbsp water, cover and cook at medium heat for about 10 mins.
Once cooked, sprinkle the chopped coriander.
Serve hot with indian bread or toast
