Slow Cooker Mexi Chicken

*1.2 lb 99% lean boneless skinless chicken breast*1 can no salt added corn( drained)*1 can black beans( rinsed)*1 jar salsa(mild)*1/2 brick fat free cream cheese(cut into little cubes)*1 packet Uncle Bens Brown Whole Grain Ready Riceoptional toppings not added to nurtition info:*fat free shredded cheddar*fat free sour cream or FF plain greek yogurt
pour corn and beans in bottom of slow cooker. top with 1/2 jar of salsa. add in chicken breasts and top with remaining salsa. cover and cook on low for 3 1/2 hours. remove chicken and cut into 1in cubes. add cream cheese and cooked rice to slow cooker and stir.add chicken back in and cook for an additional 1/2 hr.

This dish was superb, and I would highly recommend it to everyone. My wonderful wife cooked a whole crockpot of this, so we will be eating this for a couple of meals. It should be better the next day, since it has had time to set and take in all of the juices. Yummy !! Dancin Bear - 9/28/09

my hubby really loved this, my daughter loved it. I liked it quite a bit and I feel like it makes more than 4 servings. because we ate last night for dinner and then we had it in whole wheat wraps today (yummy!) and we still have leftovers!!! I will make again! Smells wonderful cooking! - 9/15/09
