Healthy Banana Bread

Ingredients
2 c. whole wheat flour1/2 tsp. salt1/2 tsp. baking soda1 tsp. baking powder--------3 large very ripe bananas (1 1/2 cup) mashed2 eggs1/2 c. brown sugar1/2 c. skim milk2 tsp. vanilla extract---------3/4 c. walnuts crushed (optional)
Directions
Preheat the oven to 350 and mix all of the ingredients.
After all ingredients are added to the mixture, beat the dough on medium for 2 minutes.
Pour dough into 1 greased large loaf pan.
Bake at 350 for 50 minutes.
Makes 1 loaf of banana bread - cut into 12 slices or 24 half slices.

    it smelled so great as it was cooking - i think it got my expectations too high! it was a little dry, if i made it again i'd use more milk & bananas, or add something like blue berries. i used sweetner instead of sugar & almonds instead of walnuts. - 9/3/09
