Spicy Sauteed fish with Tomatoes and Olives

1.4 c Olive Oil2 lbs red snapper fillets1/2 c chopped fresh parsley1/2 tsp dried crushed red pepper4 c cherry tomatoes, halved1 c Kalamata olives, chopped6 garlic cloves, minced
Heat olive oil in pan. Sprinkle fish with salt and pepper
Add half to pan and sauted until just cooked - approx 3 mins. Repeat with other half. Add parsley and red pepper to same pan and saute 1 min. Add tomatoes, olives, and garlic. Saute until tomatoes are soft and juicy - about 2 mins. Season to taste with S&P. Spoon over fish.
