Banana Nut Muffins

Ingredients
3 over-ripe bananas1/2 cup oil2 large eggs2 cups flour1 1/2 tsp baking powder1/2 tsp baking soda1/4 tsp salt1 cup sugar1 cup walnuts
Directions
Mash bananas in mixing bowl, then add oil and eggs. Beat to combine.

Mix together flour, baking soda, baking powder, salt and sugar. Then combine with banana/egg mixture.

Stir in walnuts.

Bake @375 in prepared mini-muffin pan for 18-23 minutes.
Note: prepare mini-muffin pans with crisco and flour to prevent sticking.
