Ingredients
1 apple, finely diced1 cup whole wheat flour1 tbsp brown sugar1 1/2 tsps baking powder1/2 tsp ground cinnamonpinch of nutmeg1 egg1 cup skim milk1/2 cup canned pumpkin1 tbsp canola oil
Directions
Combine dry ingredients in a medium sized bowl. Add remaining ingredients. Mix just until combined. Using a 1/4 cup measure, ladle onto a hot griddle that has been sprayed with non-stick spray.
Makes 12 pancakes.

    These are good pancakes. I found them a little dense for my liking, but I often have that problem with whole wheat flour. I might try to use some baking soda next time as that seems to make fluffier cakes. The flavor is great and they were very easy to put together. - 10/17/09

    Don't be confused. It's only one tablespoon of sugar for 12 servings. Brown sugar is considered "cleaner" because there is still some nutrients in it. Like honey or maple syrup.

    I made these and they were very good. I substituted half a cup of all purpose flour to lighten them up a bit and added a bit of baking soda. This made them fluffy. I also used succanat instead of brown sugar to make them even cleaner. My fiance liked them even though he hates whole wheat! - 2/12/10
