Ingredients
onions, peppers & mushrooms over brown rice
Directions
Start cooking brown rice, while it is cooking, saute onions and peppers until soft (I use as little olive oil as possible). Add mushrooms, stir well let then reduce down for about 5-10 minutes. Season with salt pepper and garlic as desired. Once rice is done, serve veggies over rice. I will add a little parmessean cheese on top for some tanginess, but it's not needed!
