These are super-delicious and easy! I added a little ground pepper to the mix and sprinkled a 1/2 teaspoon of grated parmesan on top after cooking. Mmmmm! - 1/7/09

A description of "shredded frog" worked wonders to get my 4-year-old to gobble these down, give two thumbs up and say "Oh, I LOVE those!". A spritz of sprayable ranch helped a lot too. - 2/9/09

Good and easy. Shredded in a small sweet potato. DH loved it. He topped his with ketchup; I served mine with unsweetened applesauce. - 11/11/16

These are delicious. I added two tbs of Parmesan cheese to the batch before cooking and a little extra salt. I topped them with fat free sour cream. So delicious and light! - 12/21/15

This recipe isn't my favorite... I think that it needed more seasonings of a different flavor. - 1/26/15

Easy and delicious. Try adding a tablespoon of parmesan cheese for added flavor in place of garlic. Found it works better if squeeze as much moisture out of zucchini as you can. - 8/18/12

Just made these and they were awesome! A lot like latkes (Jewish potato pancakes) but much healthier! I halved the recipe, used 1 egg white, whole wheat flour, and was very generous with the seasonings (I love garlic and onion powder). Will definitely make again! - 3/5/11

Perfect proportions! I love zucchini, and was looking for something to go with dinner tonight. Served this with scallops in spicy tomato sauce.
LOTS of possibilities with these - you could have with sweet or savory accompaniments. :) - 11/30/10

could I use whole wheat flour and get the same results? - 12/28/09

I've not made it with whole wheat flour, but that doesn't mean it won't work. From my expierence in redoing some other recipes, I've used 1/2 white and 1/2 wheat, I've not replaced the white flour completely. Sorry I wasn't much help....let me know though if you give it a try.

This is really great and easy. I used some extra eggplant to do the same thing, and then some calabasa, a mexican squash. - 8/27/09

My entire family really liked these. I also sprinkled with a little cheese, and would also add salt & pepper to the mix. - 8/20/09
