Peggy's Curried Red Lentils

Ingredients
Lentils, 2 cupOlive Oil, 1 tbsp Onions, raw, 1 cup, chopped Garlic, 3 cloves Ginger Root, 3 tsp Chicken Broth, 6 cup (8 fl oz) Yellow Curry powder, 1 tbsp *Cumin seed, 1 tsp Salt, 1 tspPepper, 1/2 tsp.Chopped fresh cillantro to garnish (1/4 C.)Chopped fresh tomatoes to garnish, as desired
Directions
saute onions until clear, add garlic, ginger, curry powder and cumin, saute for 1 minute. add rinsed lentils and 4 C. broth. Bring to boil. Let simmer on low. May need to add 2C. more of broth if needed. Salt and Pepper to taste. Serve over rice. Top w/ fresh cilantro and diced fresh tomatoes to taste. Serves 8 - 1/2 C. serving

    I love this recipe! I cut the salt in half and substituted paprika for half of the black pepper. I also used a combination of minced garlic and garlic powder because that's what I had on hand. I used low sodium vegetable broth as well. the dish was flavorful. Classic curry taste :) - 1/6/11
