Sweet potato casserole

Ingredients
2 medium eggs1 cup nonfat milk2 bags Ore Ida Steam 'n Mash Cut Sweet Potatoes4 T ground Cinnamon2 T Vanilla Extract3/4 cup Splenda1/3 cup Calorie-free Buttery Spray Topping:1/4 cup Whole Wheat Flour1/2 cup Light Brown Sugar1/2 cup chopped pecans1/3 cup Calorie-free Buttery Spray
Directions
Cook potatoes per package instructions. In large bowl, mix first 7 ingredients together until fairly creamy (will still have some chunks). Pour into a greased 13x9" pan and smooth top with a rubber spatula.

In a separate bowl, mix together topping ingredients and spoon mixture across top of sweet potatoes.

Bake at 350 for about 20 mins until topping is crunchy.

Each serving is about a cup!
