Ground Chicken a la King

Ingredients
450 g (1lb) ground chicken2 cups fresh or frozen veggies, chopped 2 tsp olive oil, divided1 tsp minced garlic2 tsp paprika1 10oz can low fat Cream of Mushroom soup
Directions
Heat a non-stick frying pan to medium-high. Add 1 tsp olive oil and ground chicken, cook until chicken is cooked through. Set aside, keep warm.

In same pan, add remaining 1 tsp olive oil, veggies and garlic. Stir-fry until just soft.

Stir in ground chicken, paprika and soup. Heat through, about 2-3 minutes. Serve over brown rice or whole wheat bread, with a salad on the side.
