Egg Casserole

Ingredients
Thaw frozen spinach and drain. Use olive oil to grease 8 1/2 x 11 casserole dish.Cut up canadian bacon into bite size pieces and place in single layer in bottom of casserole.Spread drained spinach on top of bacon.Next sprinkle 1 cup of mozzarella cheese on top.Beat 14 eggs on top and pour eggs over other ingredients.Bake on 375 for 30-35 minutes until eggs are cooked and start to turn golden brown.
Directions
Slice casserole into 8 pieces and enjoy.
Dish refrigerates well and can be microwaved for breakfast in 1 1/2 minutes.
