Breaded Lemon Pepper Talapia

Ingredients
24 oz Talapia (6 fillets)3Tbsp. Olive Oil1 Lemon (save peel for zest)1 tsp Salt1/2 tsp. Black Pepper3 slices bread, crumbed
Directions
Crumb bread in blender. Prepare bread crumbs by adding salt, pepper, and 1/2 tsp. of lemon peel, zested. Moisten fillets with lemon juice from 1 lemon. Dredge in prepared bread crumbs. Put rest of olive oil in deep cookie sheet. Place fillets on cookie sheet. Back at 350 degrees for approx. 10 minutes on one side (until bread crumbs are crusty). Turn and back on other side for an additional 5 minutes. Watch closely as fillets will burn easily.
