Awesome Blueberry Muffins

Ingredients
2 Cups fresh blueberries1/4 Cup all purpose flour2 cups all purpose flour1 tbsp plus 1 tsp baking powder1 tsp salt1/4 c. applesauce1 1/2 cup sugar (I used splenda)2 eggs1 tsp vanilla1 cup 1% milk
Directions
Preheat oven to 375. Grease muffin tins or line with liners.

Sprinkle blueberries with 1/4 cup flour and stir to coat.

In small bowl, whisk together 2 cups flour, baking powder, and salt.

In large bowl, mix applesauce and sugar or splenda. Beat eggs and stir into applesauce mixture along with vanilla. Stir in milk alternately with flour mixture, mixing well after each addition. Fold in blueberries. Fill muffin cups 2/3 full with batter. Bake for 25 minutes.

    I made these muffins today, and they baked up just fine. They're not dry or anything, but they don't seem to have much flavor.I used sugar, not splenda. Maybe if you used brown sugar instead, or added some cinnamon, it might add a little something. - 6/12/08

    I made this and I threw all of them away. They tasted terrible! Even my children would not eat them. I used Splenda like the recipe said, maybe if you use sugar,they would probally taste better. Thank you anyway. - 6/16/07
