Ingredients
1 cup dried split peas, rinsed and drained1/2 onion, chopped1 large carrot, sliced1 large stalk celery, chopped1/2 tsp. no-salt seasoning (I use Costco's Kirkland Organic No-Salt Blend)1/2 tsp. smoked paprika5 cups water
Directions
Place all ingredients in a 2-quart saucepan. Bring to a boil; reduce heat and simmer about an hour, stirring occasionally, until the consistency is the way you want it. Add water if it gets too thick before the peas are soft. Makes about one quart (four one-cup servings).
