Chickpea Spelt Salad with Lemon Dressing

Ingredients
4 cups cooked spelt1.5 cups cherry tomatoes, halved1.5 cups diced cucumber1 red bell pepper, diced1 can chickpeas, drainedDressing:juice and zest of 2 lemons3 T olive oil1 t dried tarragonsalt and pepper to taste
Directions
Whisk together dressing ingredients. Add remaining ingredients and stir to combine. Serve chilled.
