Shrimp Etouffee

Ingredients
2 medium bell peppers, chopped2 medium onions, chopped8 stalks celery, chopped4 cloves minced garlic1 cup diced ham1 cup Tony Chachere's roux2 cans reduced fat cream of mushroom soup2 cans Rotel tomatoes1/4 cup lemon juice6 cups waterCreole seasoning to taste4 lbs. peeled, deveined shrimp
Directions
Saute vegetables in olive oil until vegetables are translucent. Add diced ham and mix together. Add 1 cup prepared roux (according to package directions) and stir well with vegetables. Add 2 cans mushroom soup, 2 cans Rotel tomatoes, lemon juice and creole seasoning. Stir until well combined and simmer for 5 min. Add 6 cups water. Simmer for 10 minutes. Add peeled shrimp, and cook until shrimp are pink and firm. Serve over rice. Top with chopped green onion.

    Tony Chachere's is a line of creole seasoning products, which can be found in most U.S. stores. It can be ordered online. The advantage to using this is that it has no oil or fat. Roux is typically flour cooked in oil, used to thicken and deepen the flavor of stews.
