Ingredients
1 Tbsp Olive Oil1 large Onion, thinly sliced1 large Potato, thinly sliced1 large Zucchini, thinly sliced4 medium Eggs1 cup Egg BeatersSalt and Pepper to taste1 Tbsp Parmesan Cheese, grated
Directions
Heat the oil in a large saucepan. Add the onion and cook until soft. Add the potatoes and cook until lightly brown. Add the zucchini and cook until almost soft. In the meantime, beat the eggs with the Egg Beaters. Add the salt, pepper, cheese and blend well. Pour the egg mixture on the veggies and cover. Cook until bottom is light-brown and top is no longer liquid. Flip around and cook until lightly brown on the bottom. Slice and enjoy with some rice.
You can use only Egg Beaters instead of the eggs to cut down on cholesterol.
