Crab & Cucumber Salad

Ingredients

1 cup Imitation Crab Meat (chopped)1 cup Cucumber (chopped w/large seeds removed)1 cup Egg Noodles (cooked)2 tbsp. Low Fat Mayonnaise1 tbsp. Dill Relish1 tsp. Honey Mustard2 tbsp. Colby Jack Cheese (shredded) [optional]
Chop crab meat and cucumbers into small pieces.
Mix all ingredients together. Salt & Pepper to taste.
You can also play with other spices also to your liking.
Using Fat Free Mayo and omitting the noodles will lower the calorie/fat content, but I usually eat this as a meal, so it's not too bad.
Makes 6 1/2 cup servings
