Salmon with Ginger Vegetables

Ingredients
Sesame oil, ginger, sliced leek2 portions salmon filletCourgette, carrotsSherry, soy sauce
Directions

Heat sesame oil, fry finely chopped ginger and sliced leek.
Add 2 salmon fillets, skin side down.
Cut courgette and carrots into ribbons (using electric peeler).
Add to fish.
When veg are limp and fish nearly cooked, add sherry and soy sauce. Turn fish skin side up.
Reduce sauce. Serve fish, stir up veg and add a little water to deglaze if necessary. Serve veg.
