Creamy Veal Marsala

Ingredients
2 Tbsp olive oil, divided10 oz crimini mushrooms, sliced1 lb Veal sirloin, pounded thinly1/4 cup flour1/2 tsp salt1/4 tsp pepper2 Tbsp shallots, chopped1/2 cup marsala wine1/4 cup heavy cream
Directions
Heat 2 tsp olive oil in 12" skillet over medium heat. Saute mushrooms until brown; remove from skillet and keep warm.

Combine flour, salt, and pepper in shallow dish or ziptop bag and dredge veal. Heat remaining olive oil in skillet. Saute veal until brown and cooked through. Remove from skillet and keep warm.

Return mushrooms to skillet and add shallots. Deglaze pan with Marsala wine, and cook until wine is reduced by half. Add in cream and return veal. Cook until heated through. Serves 4.
