Chocolate Peanut Butter Breakfast Cookies

Ingredients
1/2 cup unsweetened dark cocoa (such as Hershey's Extra Dark Cocoa)1-1/2 cups white whole wheat flour1-1/4 cups quick-cooking rolled oats3/4 cup granulated white sugar1 tsp. cinnamon1 tsp. salt2 tsp. baking soda1/2 tsp. baking powder1/2 cup semi sweet chocolate chips1 large egg1 tsp. vanilla1/2 cup unsweetened applesauce1/2 cup natural peanut butter
Directions
Preheat oven to 350 degrees F. Whisk together the first nine ingredients (through the chocolate chips) in a large bowl. In a small bowl, whisk the egg, vanilla, applesauce and peanut butter together. Pour the wet ingredients into the dry and mix well.

Line two cookie sheets with parchment paper (this is optional, but it makes for easier clean-up). Roll dough into 20 balls, pressing down to flatten in the shape of a cookie. Place dough on prepared cookie sheets one inch apart. Bake 8 to 10 minutes. Remove from oven and let cool 10 minutes.

Makes 20 breakfast cookies.

    Used splenda, omitted salt and added extra 2 tbl applesauce. Good flavor, they are a bit dry but I didn't think it was a problem. Similar to various protein bars on the market. Hoping they freeze well so I can make a batch at the beginning of the week and then pull them out as needed. - 12/7/12

    I should have read reviews so I would have known to add more applesauce. Without it, the dough is so dry you can't even mix it, trust me. Well, I added an extra egg to moisten and it was fine. I also think there is a bit too much salt, may want to reduce to 3/4 tsp. Good taste! - 5/15/11

    Good! I substituted splenda blend for the sugar, and used 6 tbsp. of mini chips instead of the 1/2 cup of regular chips, and used reduced fat peanut butter. I also omitted the cinnamon as I don't like cinnamon and chocolate together. My kids loved them! - 1/30/10

    Very good although I had to add more applesauce to it to make it thinner. I also added zucchini and only half of the sugar for one amount. The recipe does not include the size of the balls so had to guess. - 6/12/16

    Adjusted this slightly, turned out a little more gooey than is probably intended, but I liked it!
    Dry ingredients didn't seem to be completely integrating with PB & applesauce, so added another spoonful of applesauce and splash of milk to moisten it a bit. White choc chips next time! - 5/31/15

    I saw the other reviews and decided to try cutting half a cup of flour, but the dough was still VERY dry. I sort of hoped some kind of applesauce magic would happen and they'd turn out normal after baking. But they turned out quite dry, though I only baked them for 7 minutes.
