Ingredients
1-15 ounce can of unseasoned black beansOR 1 1/2 cup cooked beans, any color5 large eggs1 tablespoon pure vanilla extract1/2 teaspoon salt 4 Tablespoons unsalted butter2 Tablespoons Lowfat Cream Chese1 1/2 cups Splenda6 tablespoons unsweetened cocoa powder1 teaspoon aluminum-free baking powder1/2 teaspoon baking soda2 Tablespoons strong coffee
Directions
Preheat oven to 325 degrees.

Blend everything in the food processor and bake in a parchment lined, greased 9-inch cake pan.

Cake is done when a toothpick comes ut clean.

Frost with low carb buttercream icing.

    This was our first "b'day cake" since going low carb, SF. Very moist! Family liked! My only critique is that the recipe needed more detailed directions. I accidentally found it on another website - Healthy Indulgences - with a few changes. Really enjoyed this. - 10/31/11
