Creamy Sauteed Chicken with Spinach

1 lb. boneless skinless chicken breast halves1 cup 2% milk1/2 cup chicken broth1/2 cup chopped onion6 cups chopped fresh spinach1/4 teaspoon salt1/4 teaspoon fresh ground black pepper1/4 teaspoon ground nutmeg
1. Spray a large skillet with nonstick spray.
2. Heat the skillet on medium heat.
3. Cook the chicken 2 minutes per side.
4. Reduce heat to med-low.
5. Add milk, chicken broth, and the onion.
6. Cook 5 minutes, turning the chicken on occasion, until the onions are tender.
7. Add the spinach and cook 3-4 minutes, stirring occasionally, until the spinach is wilted and the juices of the chicken run clear.
8. Remove the chicken from the skillet, and keep it warm.
9. Increase heat to medium.
10. Cook the spinach mixture until most of the liquid has evaporated, about 3 minutes.
11. Stir in salt, pepper, and nutmeg.
12. Serve the chicken on top of the spinach.
