Hearty Oatmeal Pancakes

Ingredients
1 cup low fat plain yogurt1 cup rolled oats1 egg 1/4 cup flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp cinnamon1 tbsp flaxseed1 tbsp wheat germ 1/2 cup grated zucchini
Directions
The night before mix together oats and yogurt. Cover and refrigerate overnight.
In the morning add egg.
In a small bowl mix together flour, baking powder, baking soda, cinnamon, flaxseed and wheat germ. then add to yogurt mix. Add zuchini and mix briefly. You may need to add water to get desired consistency. Fry in hot, greased pan.

Makes 10 small pancakes.
