3 c. uncooked oatmeal any style3 c. buttermilk, low fat3 eggs3 t. baking soda1/2 t. salt1/4 c. flour
Soak oats with buttermilk overnight. In the morning mix the dry ingredients together. Set aside. Blend in eggs with oat mixture. Add more buttermilk if necessary. Add dry ingredients. Cook on a dry skillet sprayed with Pam just like you would a pancake. Serve warm.
This makes about 16 large pancakes about 8" in diameter.
