Potato & Chick Pea Curry

Ingredients
2 potatosi can chick peas 1 onion, slicedpeasolive oil, 2 tbsp1 tbsp curry powdersalt1 can diced tomatoes
Directions
Dice onions and saute in heated oil (medium heat). Add curry powder and brown for ~2 minutes. Add rest of ingredients and simmer until potatoes are cooked. Salt to taste. (tNOTE: if you use curry powders you MUST salt them)

    i used only one potato and supplemented with cauliflower; need; i added cumin and tumreric, garam masalla and cinnamon and a small amount of raisins; toss some skim milk cucumber riata (grated cuke in yogurt and a bit of cumin) and YUM; mine needed a bit more liquid so i used chicken stock; - 5/22/10
