Seafood Spinach Alfredo

Ingredients
Whole wheat extra wide noodles1 12 oz. can Evaporated milk, Vit. D added1/2 c. water1 pkg. (16 oz) seafood mix - shrimp, scallops & calimari1/4 c. grated Parmesan1/4 c. Feta cheese1 tsp. ground Oregano2 tbsp. garlic2 tbsp. chives (chopped)3 c. fresh spinach1 tbsp. olive oil2 tbsp. whole wheat flour
Directions
In large pot, boil water for noodles; when rolling, cook noodles for 8-9 minutes. Meanwhile, in a large saucepan on medium heat, pour in milk, water and seafood. Add spices and cook for 5 minutes. Add spinach, stirring occasionally. After another 5 minutes, bring sauce to a low boil and add flour. Stir in to thicken, then add cheeses. (Sauce will still look a little thin). After draining noodles, remove from heat and add olive oil and stir. Once the flour and cheeses are blended, pour sauce over noodles and serve.
