Leek Pie (Torta de Alho-Poró)

Ingredients
1 cup of white flour1/2 cup of corn starch1 cup of skim milk3/4 cup of canola oil2 eggs2 tsp of baking powder1 dash of salt1 dash of black pepper1 leek1 red tomato1/2 cup of parsley
Directions
Pre-heat over for 10 minutes to 220º.
Blend the flour, corn starch, milk, oil, eggs, salt, pepper and baking powder.
Thinly slice the leek and quickly fry it.
Remove from heat and mix the parsley and the tomato.
Put half of the mix in a round dish, add the leek, tomato and parsley and cover with the remaining mix.
Bake for 30 minutes.

    I'm glad you liked it! Keep in mind you change the veggie to make it different. Works really well with escarole as well.

    Sure! But whenever I substitute white flour in any recipe, I still use around 30% white flour just to make sure it rises nicely.

    It's Celcius. Somehow the sumbol got messed up in the directions.

    I just made this yesterday. I didn't have leek or parsley but instead used a combination of red & yellow onion along with some orange pepper and the tomato. I also used Ener-G egg replacer, effectively turning this into a vegan recipe, and it was divine! :) Highly recommend it! - 8/24/09
