shrimp and sausage gumbo

Ingredients
1 pound jennie o smoked turkey sausage(cut into 1 inch pieces16oz jumbo shrimp cooked2 cans diced tomatoes undrained1/3 red bell pepper (chopped)1/3 yellow bell pepper (chopped)1/3 onion (chopped)3 garlic cloves(chopped)3 tbsp extra virgin olive oil1 tbsp fresh cilantro2 cups long grain rice
Directions
Heat olive oil on medium heat, add chopped red pepper, yellow pepper, onion, garlic cloves cook until onions appear clear. Add smoked sausage and cook 3-5 min . Add 1 1/2 tbsp of flour to make a roux. Add 2 cans of diced tomatoes cook for 5-7 min. Then add shrimp turn heat on low and cook shrimp for 3-5 min or until they curl up season to taste. Serve over rice. Makes 6 servings
