Cherry Pan sauce for pork chops

Ingredients
1 T EVOO1 large shallot, chopped1 15 ounce can whole pitted cherries, drained or1 bag of frozen cherries, thawedzest of 1/2 lemon1/2 cup stock
Directions
Place skillet on stove and heat under medium-high heat. Add EVOO. Cook shallots 1-2 minutes. Add cherries to shallots along with lemon zest to warm through. Add stock and let cook for another minute. Add butter, toss to combine. Pour over chops or ham.
Makes 4 servings.
