Chicken and rice skillet dinner

3 Tbsp. butter divided2 chicken breasts (no skin or rib meat)2 c. sliced fresh mushrooms1/2 c. onions, chopped1 c. white rice, uncooked2 Tbsp. fresh chopped basil1 Tbsp. dried parsley2 Tbsp. cooking sherry (optional)2 c. chicken broth1/2 c. water1 cup of frozen mixed veggies
Season chicken breasts with salt and pepper. Melt the 2 T. in the skillet and brown the chicken on each side. Remove from skillet and add remaining butter. Saute mushrooms and onions slowly until tender. Add rice, basil, parsley, sherry, broth, water and mixed veggies, salt and pepper to taste. Place the chicken on top. Cover, reduce heat and simmer for about 30 minutes. Serve.
