Tasty Veggie Stir Fry

1 Large Green Bell Pepper (280 grams)1 bag EatSmart Vegetable Stir Fry (12 oz)1 can Ty Ling Naturals Stirfry Mushrooms1 can Ty Ling Naturals Stirfry CornOlive Oil Cooking Spray
Coat a large pan with cooking spray. A 12-inch wok works best; if you don't have one, a pasta pot will be the next best thing.
Add entire bag of stirfry, and begin cooking over medium heat. Cover while cooking.
Cut pepper into thin strips, and cut those strips in half to make bite-sized pieces. Add to stirfry and cover again.
Drain both mushrooms and corn, and rinse in a strainer. Add to stirfry. Cook covered, over medium-low heat for 30 minutes, or until vegetables are hot. Veggies should still be crisp.
Makes 5 2-cup servings.
