Italian Baked Zucchini with Mozarella

4 T. Chopped Parsley2 t. minced garlic4 T. Chopped Basil1/2 cup shaved Parmesan Cheese1/2 cup Panko Breadcrumbs1 c. thinly sliced Zucchini4 oz. shredded Mozarella2 T. olive oil
1. Mix parsley, garlic, basil & parmesan in a small bowl.
2. Mix 2 T. of garlic mixture with breadcrumbs in a seperate bowl.
3. Spray baking dish with non-stick spray.
4. place layer of Zucchini in baking dish. Top with layer of mozarella, then layer of garlic mixture. Continue unti lall ingredients used. Top with breadcrumb mixture. Drizzle olive oil over top.
5. Bake at 400 degrees for about 15 minutes - until top is browned.
