1 lb ground turkey2 medium zucchini sliced2 medium sweet potatoes, sliced1 medium onion, chopped2 tsp cumin1 tbsp garlic powder1 tsp black pepper2 tsp coriander
In a large skillet (I use cast iron) brown the turkey, add sweet potatoes first and allow to cook at medium heat about 5 minutes before addding zucchini, onions, and spices. Toss well in pan to assure even cooking. Once veggies are beginning to soften reduce to low heat and cover. Allow to cook another 10 minutes over low heat or until sweet potatoes are the way you like them.
Makes 6 one-cup servings.
