Ingredients
1 3/4 c. whole wheat flour1/4 c, oats1/4 c. flax seed meal1/4 c. wheat germ4 tsp. baking powder1/4 tsp. salt1 egg2 egg whites1 3/4 milk1/2 c. applesauce 1 tsp. vanilla extract
Directions
Mix dry ingredients. Mix wet ingredients and combine dry with wet until smooth. Cook waffles in a lightly greased preheated waffle iron according to manufacturers insturctions. (I use 1/4 c. waffle grid. Serve with syrup, cut up fruit, applesauce or yogurt on top. Makes 16 squares.

    You can substitute oat bran, wheat bran, wheat germ, or if you don't have any of that just substitute it with more whole wheat flour. I have mixed and matched as needed and they still have turned out great.

    These are the best waffles I have ever tasted. I didn't have wheat germ on hand so I subbed soy flour for that ingredient and cinnamon for the vanilla. A little extra protein doesn't hurt a vegetarian any! Anyway, they were delicious and I've made a load up in the freezer; they re-toast beautifully. - 1/5/09

    These were very good & filling with all of the "good" stuff in them. I topped mine with homemade strawberry sauce. I have extras for another day or to freeze.
    Side note...due to the applesauce (I think) it did take a couple of extra minutes to cook after the waffle light went off. - 9/23/10

    I've made this recipe twice now. The second time turned out great (first time were too dense). I highly recommend adding a bit more milk and whipping the egg whites first and then fold them in at the end. Makes for much lighter waffles. Also added a lot of cinnamon. - 2/16/10

    I LOVED these, but my boyfriend wasn't too happy with them for breakfast. He suggested making them for dinner with fried chicken. I think I could do that for him and I could do without the fried skin and save the extra meat for a lunch salad the following day. Thanks for the recipe. - 6/21/10
