Oma's German Potato Salad

Ingredients
Potato, 8 medium Onions, 1/2 cup, sliced thinlyCucumber, 1/2 cup, sliced thinlyWhite Vinegar, 4 tbspCorn Oil, 4 tbspsalt and pepper to taste
Directions
Scrub potatoes, but leave skin on. Put in pan with water to cover and heat to boiling, cook until fork pierces the flesh.
While potatoes are cooking, peel cucumber and slice thinly. Place cucumber slices in salted water.
Slice onion thinly and place in bowl with oil and vinegar.
When potatoes are done, drain and allow to cool intil you can pick them up, then peel and dice into dressing.
Drain cucumber, squeezing to remove excess moisture. Add to potatoes and mix lightly, season to taste with salt and pepper. Can be made less sour with a little sugar if desired.

    Instead of cucumbers, I use pickles in my version of this recipe and I add some Maggi beef instant bullion to the potato cooking water for even more flavor. - 4/26/11

    This is how my mother and Oma made German potato salad, but they are both from the Swabia region where people don't like their food as "sauer" as those from the northern regions do. LOVE this recipe!!! We use red wine vinegar and EVOO for added health benefits. - 4/12/10
