Thai/Vietnamese Style Rice Soup

1.5 Cups Rice, cooked according to instructions1 lb raw chicken diced small1 Chicken Flavor Bouillon Cube1/4 Cups Fresh grated ginger root or to taste2-3 Garlic Cloves1/4 Cup Onion, dicedSalt and Pepper to Taste1-2 T Fish SauceGarnish with bean sprouts, mint, lime juice and/or french fried onions/garlic
Cook rice according to package instructions. Once rice is fully cooked add bouillon cube and raw chicken, making sure chicken is cut in very small pieces. Simmer until chicken is fully cooked. Add ginger, onion, garlic, and salt. Add fish sauce and more salt to taste.
Please note you may need to add water if soup becomes to thick.
Garnish with bean sprouts, fresh mint/herbs, lime juice, and french fried onions or french fried garlic.
Makes approximately 4 servings.
