Orange Sauce for Poultry

2 Tbsp. sugar2 Tbsp. vinegar1/2 cup orange juice1 cup low-sodium chicken broth or 1 bullion cube plus 1 cup water1 Tbsp orange rind1-2 Tbsp corn starch (calculated info is for 2 Tbsp)2 Tbsp orange cuacao, cointreau, or other orange liquor (optional, included in info)
Heat 1 cup broth or bullion until hot (like coffee, boiling isn't necessary)
Mix sugar and vinegar in a bowl and microwave on high for 3-5 minutes until mixture turns light brown. The timing is tricky & matters for this step - if mixture is not heated enough, the sauce won't thicken, so make sure it has changed color a bit.
Add heated broth and mix. Add 1 Tbsp cornstarch, orange rind, and orange juice. Microwave until boiling a few minutes longer. If mixture appears very runny, dissolve remaining Tbsp cornstarch in a small amount of cold water and then add. Microwave longer for a thicker sauce.
After heating, allow to cool a bit and stir in liquor.
Serve over poultry or pork and enjoy!
