E2 Red Beans over Quinoa

Ingredients
4 3/4 cups water3 cups quinoa1 tbsp onion powder1 tsp garlic powder2 bay leaves2 green bell peppers, seeded and chopped1 tsp dried thyme1 tbsp rice vinegar1 big can kidney beans, rinsed and drained
Directions
Bring 4 cups water to boil. Rinse quinoa using a small sieve, add to water, and cover. Reduce heat to medium and cook for 25 minutes. While it is cooking, cut green peppers. Spray nonstick pan with Pam and cook for 5 minutes. Add thyme,beans, vinegar, and 1 cup water. Cook on low heat for 5 more minutes or until it begins to thicken.
Serve 1 cup cooked quinoa with 1 cup cooked green beans and peppers.
Makes 7 servings.
