Sauted Tomato Chicken and Noodles

Ingredients
3 Medium sized tomatoes1 Box of whole wheat noodles2 medium sized chicken breast (boneless, skinless)1/4 of red onionsmall bunch of cilantroextra virgin olive oil
Directions
dice onion and cilantro
deseed, clean, and cut up tomato into chunks
cut up chicken into chunks

put some olive oil in a pan
cook chicken and set aside
saute onions
once they begin to brown add tomato and cilantro
let this simmer for about 5-10 min.
add chicken, mix it, and let it simmer
cook noodles and drain
add to the pan or put tomatos and chicken over noodles

**to speed up process cook noodles early in the week and just add to pan and heat through
