Baked Salmon,Tomato, Spinach & Mushrooms

1 - 3 oz salmon fillet, 1 tsp. olive oil, 1 cup chopped fresh spinach leaves, 1/4 cup sliced mushrooms, 1 tomato chopped, 4 tbsp. low calorie Sun-Dried Tomato Dressing, salt & pepper.
Heat oven to 375. Spray baking dish and fish with cooking spray and place well seasoned fish, skin side down, in baking dish. Bake 15-20 or until fish flakes easily with fork. Remove from oven.
Meanwhile in sauce pan add 1 tsp olive oil and chopped tomato, cook for 10 min add mushrooms, cook additional 10 min add spinach and season to taste. Remove from heat. Place spinach mixture on a serving dish and lay baked salmon on top.
