Fettuccine "Alfredo" with shrimp & veggies

12 oz whole wheat fettuccine, linguine, or other pasta of your choice1 tablespoon olive oil9 oz shrimp, peeled, de-veined, and thawed8 oz sliced mushrooms (optional)1 can diced tomatoes, drained or 2 diced fresh roma tomatoes (optional)2 cups fresh spinach leaves (optional)8 oz neufchatel cheese or other low fat cream cheese1/2 cup parmesan cheese5 cloves garlic, minced1/4 cup finely chopped onion1 cup fat-free, low sodium chicken broth
Cook pasta as directed on package. Heat oil in LARGE skillet, and add shrimp, garlic, mushroom and onion. Fry 1-2 minutes or until tender. Add cream cheese and chicken broth, cook and stir 3-4 minutes or until cream cheese is melted. Add parmesan cheese, tomatoes and spinach. Stir. Drain pasta and place in large bowl. Pour contents of skillet over pasta, toss and serve.
