Zucchini/Cream Cheese Frittata

Ingredients
6 oz zucchini--cut into slices then halves3/4 cup sauteed green peppers, red peppers and onions (I premake a batch and use it for everything)6 eggs5 tbsps Fleur de Lait Minced Garlic & Herb Spreadable Cheese2 oz 1/3 less fat cream cheese2 oz Market Panty Shredded Cheddar Cheese1/2 cup Vit D milk or half and half
Directions
Sautee the zucchini until it's warmed through-not browned with 3/4 cup peppers/onions mixture
I sautee with pepper and garlic salt and 1 tbsp unsalted butter.

Put the ingredients into a baking dish (8x8)

In mixer: Blend 6 eggs, 1/2 cup milk, 2 oz cream cheese, 5 tbsp Fleur de Lait Cheese. I like to leave the cheese kinda clumpy so when it cooks, there are thicker areas with cheese in it.

Pour the mixture onto the zucchini in the baking dish and top with 2 oz of shredded cheddar cheese.

This dish will serve 4, bake at 325 degrees for 25-30 minutes.

You can also add tomatoes, mushrooms, canadian bacon, whatever you want to the ingredients to your liking.
