Brown Sugar and Cinnamon Scones

2c King Arthur Unbleached All-Purpose Flour1c King Arthur Whole Wheat Flour1/4c Granulated Sugar (52g)1/4c Brown Sugar (52g)1/2tsp Baking Soda1tbs Baking Powder1/2tsp Sea Salt (may be decreased or omitted)1 Stick Smart Balance 50/50 Butter Blend1c Hershey's Cinnamon Chips (150g)1c Kate's Real Buttermilk Raw sugar for sprinkling
Preheat over to 500 Degrees
Mix together dry ingredients except cinnamon chips.
Cut in butter to makes coarse meal texture.
Stir in cinnamon chips.
Add buttermilk and use a few strokes to mix together forming a rough ball.
Turn onto floured board and knead not more than 10 times. You want your dough to be mixed but not so smooth as bread dough.
Form a circle roughly 10inch diameter or 3/4" thick. (Alternately you can form two 6' Circles for smaller scones.)
*Optional - sprinkle top of circle with course raw sugar
Cut circle into 12 wedge shaped pieces.
Using a spatula or scraper transfer wedges to a lightly floured baking sheet.
Place in oven and reduce heat to 450 degrees.
Bake 15 minutes or until golden (check smaller scones at 10-12 minutes)
Makes 12 servings. (16-24 smaller scones)
